"Rebirth" is an option available once a character reaches age 20. Rebirth resets your level back to 1 (as well as removing the stats you gained from leveling /aging), and gives you the option to change your race and starting age (10-17). You keep skills , titles , money, AP, your Pet and items when rebirthing.
